Mr. Takayuki Sugaya has been working as a chef since he was 15 years old. The owner, who had 22 years of training at a famous sushi restaurant in Tokyo, opened [Sugaya] on December 7, 2018 in the familiar Azabu area. ``Since we are a sushi restaurant, we want you to enjoy the nigiri,'' so we serve about 10 pieces of nigiri for 4 to 5 items. Please enjoy to your heart's content the various nigiri made with our extensive experience and proven techniques.

We purchase fresh seafood delivered daily from Toyosu Market with a discerning eye. We have great trust in Yamayuki, Japan's most famous tuna wholesaler, and Asahi Suisan, which has high-quality ingredients. Using the skills cultivated over many years of experience, we carefully prepare the ingredients to match the ingredients and deliver them to the customer at the timing that we think will be the most delicious. Combined with sushi rice blended only with Yokoi Jozo's vinegar, this gem of a consistency is made with exquisite force and gentleness, leaving a simple yet delicious and pleasant aftertaste.

When you enter the store, you are greeted by a counter made of Kiso cypress. The simple atmosphere with no unnecessary decorations is just like the owner's personality. The space carefully designed by interior designer Koji Sato of ``SKDinc.'' invites you into the extraordinary, and combined with the special feeling that reservations are required, it brings you a blissful time.
