ChefYoshihiro Takahashi: Rediscovering the past and exploring evolution
Born in Kyoto Prefecture in 1974. The eldest son of Eiichi Takahashi, the 14th head of the family, who has also been recognized as a holder of the Kyoto Prefecture Intangible Cultural Property. After graduating from university, he trained for three years at the Japanese-style restaurant Tsuruko in Kanazawa, Ishikawa Prefecture, before returning to Kyoto in 1999. He is currently the 15th head of the family. While respecting the continuation of traditions such as the specialty "Hyotei Egg" and "Morning Porridge," he is also eager to explore new flavors, and while he shows off his skills at "Hyotei," he is also deeply interested in food education and continues to hold lectures on the subject.

With 450 years of history, this long-established restaurant has been patronized by people for a long time. This long-established restaurant, which appears to be unchanging, has weathered the ravages of the times many times, and has been particular about tradition, to the point where it is now at the forefront of Kyoto cuisine. The essence of a long-established restaurant is not ties, but a generous spirit of "hospitality" that meets the needs that change with the times. On a quiet street by the Nanzenji Temple, there is a hut with bamboo latticework that exudes a strong sense of age. About 450 years ago, Kuzuya (Hyotei Main Branch) opened as a teahouse in a corner of Nanzenji Temple, and while it has now become famous around the world, it has maintained its tranquil appearance. As its name suggests, the thatched roof that remains from the time of its founding is reminiscent of the good old teahouses of Kyoto, inviting customers to the depths of their imagination. It would be a good idea to take the time to reflect on this brave presence that has continued unwaveringly for 450 years.
