ChefTetsuo Ota (OTATATETSUO) - A solitary chef looking into the future of food
Born in Nagano Prefecture in 1980, he decided to become a chef while studying abroad in Italy and began his training. He gained experience in Japan, Italy, and Spain. He honed his skills at famous restaurants such as El Bulli, which was said to be the hardest restaurant in the world to get a reservation for, and then went to South America to study under Gaston Acurio, a national hero of Peru. While demonstrating the techniques he learned around the world in Restaurants, he also made a significant contribution to the global food environment and fair trade through activities that go beyond the role of a chef, such as the production, distribution, and sale of ingredients.

During his travels through the Amazon, the chef came across cacao that was not being properly valued and the profits were not being returned to the local community. With its fruity flavor and a moderate fermented smell, cacao is great for Sweets and also as an ingredient in cooking. Chef Ota uses it as a sauce for Meat Dishes, just like red wine. Currently, Amazon Cacao, which Ota bought the entire village and built a processing plant for, has grown to 2,000 employees. It is a major business that supports the local community.

"LA CASA di Tetsuo Ota" means "Tetsuo Ota's House." As the name suggests, the restaurant welcomes guests like a home, with almost all of the interior design and furniture selected by Chef Ota. There is only six seats at the counter. Every seat is a special seat where you can see every move of Chef Ota as he cooks. The course meal can sometimes last up to five hours, but the time spent in such a warm atmosphere is so long that it's a shame to let it end.
This Karuizawa Restaurants is so hard to book that anticipation is building for its next stage in 2027.
