①未利用魚となっている骨切りできない大き過ぎるハモの、骨を抜くことに成功しました。「ほね抜き鱧(ハモ)」として別府廣門の春〜夏のスペシャリテとしてコースに登場します

...o reflect the beautiful scenery of the countryside, has a "local production for local consumption" theme. It is a special experience to watch from the counter, which has only seven seats, as the owner, Taizo Hirokado, who has trained for over 20 years at a Michelin-starred Japanese Cuisine, prepares the dishes right in front of you. Another enjoyable feature is the soba noodles made by the owner that day, which are served towards the end of the meal.
