Born in Okayama Prefecture, Tetsuo Azuma was a late bloomer who decided to become a chef at the age of 25, after training at the Spanish Cuisine "La Maza" in Kyoto, before going independent. He adds his own creativity to the classic dishes he learned during his training in Spain, and sometimes incorporates gastronomic techniques to create a unique world of Spanish Cuisine. He serves the specialty paella himself, and his high level of hospitality has earned him many fans.

Pan con tomate is a popular Spanish Cuisine, but at "acá" tomatoes are kneaded into the bread and topped with fish, making it appear as "fish bocadillo". In addition, the paella uses Japanese ingredients such as crab, blackthroat seaperch, firefly squid and bamboo shoots, making it a unique, truly Eastern-style modern Spanish dish. The chef's selection course menu, which includes 10 dishes that bring out the best in the carefully selected ingredients and 3 Sweets, will overwhelm diners.

Opening the iron door with the restaurant name "acá" inscribed in small letters on the side, you enter a beautiful space with clay walls reminiscent of the red clay of Spain, iron objects named after the chef, and antique wood placed casually. In front of the counter made of a single zelkova board is a kitchen reminiscent of a Kyoto oven, where you can enjoy live cooking using charcoal and firewood grills. The collection of Scandinavian vintage furniture carefully selected by the chef's discerning eye is also worth a look.
