さて北海道旅行3日目のランチは、富良野に行ったら絶対に来てみたかったル・ゴロワフラノさん。 昨年NHKでも「シェフとマダムの物語」という番組で紹介されていましたね。
新富良野プリンスの敷地内にあるお店、アプローチの小径とお店の前の緑の景色が最高ですね。
マダムにご挨拶してお部屋へ案内されると、なんと窓際の個室で最高の席です。3月に予約した時には窓際の席は既に埋まっているとのことだったけど、キャンセルが入ったそうな。ラッキー!
さて料理は「北海道の旬のランチ 5300円」をお願いしました。
この時期、アスパラガスが旬ということで、アスパラを使った料理の数々。そしてテレビ番組でも放映されていた行者ニンニクは、シェフとマダムが自ら山に入り採ってきた自然のものとのこと。
料理をいただいていると窓の外にエゾリスの家族の姿。「4匹の家族なんですよ。」とマダム。子供2匹はおっとりした性格だそうな。ほのぼのしていいねぇ。
料理は北海道の食材を使い、食材の味を生かす味付けで本当に美味しい。富良野ワインのミュラートゥルガウの白ワインとも、地のものと地のワインで相性が良いですね。
標茶産の黒牛を炭火ではなく薪火で焼いて、香ばしさを纏ってます。旬のアスパラも自然な甘さが新鮮さを物語ってます。
そして最後に選んだのがパティシエのマダムが作られたハスカップ、ブルーベリーのクラフティ。卵を溶いた生地を入れて焼いてあって、優しい甘さとハスカップの酸味が良いですね。丼一杯食べたい!
美味しい料理にマダムの接客が加わり、お店の印象が二乗にも高まりますね。こういうお店が家の近所にあったら毎日通ってしまいそう。シェフとマダムが富良野に来られる前に表参道と青山外苑前でお店をやられていて超人気店だったというのがよくわかりました。そうそう私の母親が外苑前のお店に行ったことがあると言ってました。
またこちらのお店に来るために、富良野に戻ってきたいと思ったのでした。
