岐阜に行く用があったので、ついでに1週間前に開店すぐを予約しておきました。当日、開店1時間前に到着し、柳ヶ瀬をウロウロして時間を潰し、さらに店の横で待機し、小さな看板に明かりが着いたところで店に入ります。
店内は、寿司屋か割烹のように凛としていながら落ち着きを感じます。「どこでもどうぞ。」とのことなので、焼き場が後ろから眺められるL字カウンターの一番奥に着きます。座るとすぐに「お通しです。」とお椀がカウンターに置かれるので少し驚きます。
14人程座れるカウンターに個室が4つと結構なキャパがあり、それにしては小さめの焼き台で回転が心配されましたが、開店すぐだったこともありスムーズでした。
串は一本単位で注文でき、味付けはお店任せ。塩はダシが効かせてあるような味わいで、タレは甘くも辛くもない好みのバランスですが、素材に寄ってどちらにも振れます。
お肉は適度な堅さで、口の中には焼き鳥を超えて和食のような出汁の風味に似た味わいと、新鮮でさっぱりした鶏の肉汁が広がります。
野菜は焼き台とは別の陶板で焼かれ、火の加減が分かりづらそうですが、素材の持ち味の食感を残しつつ、しっかり中まで熱が入れられています。
料理の味は感動的で、珍しく深々とお辞儀をして「美味しかったです。」と店を後にしました。ウチからは遠回りになってかなりの距離があるのでそうそう来られる場所ではありませんが、またの機会に必ずお邪魔しようと思います。
