2014年ミシュランガイド福岡・佐賀特別版にて二つ星評価された日本料理のお店
福岡市内からは少し距離はありますが、まさにわざわざ訪れる価値がある素晴らしいお店だと思いました
初代の店主源吉さんが川魚料理・水飴を営んでいて通称「飴やの源さん」と呼ばれていたことから屋号「飴源」となったそう
現在は四代目とその跡取りの五代目で営まれています
到着したらまずは囲炉裏のある部屋に通され「蓬茶」をいただきます
ここに訪れた多くの著名人の写真が飾ってありました
この日いただいたのは
玉島川 夏の川魚料理
◆9300円コース+天然鰻を別注いたしました
・小鉢…鮎の酢の物、青梅のシロップ煮
・うなぎの湯引き造り
・スッポンのスープ
・鮎の背ごしと鯉の洗い
(大鉢にはたくさんの摘草、野菜が~蔓紫、ラディッシュ、胡瓜、素麺瓜、日野菜、イエロー人参、赤大根、刺身蒟蒻、ルッコラ、大根の茎、独活、獅子唐、根深巻など)
酢味噌に自家製の柚子胡椒と蓼の葉を入れていただきます
見た目も鮮やかな大鉢、きっと1日に必要な野菜相当いただけた感じ
鯉の洗いも鮎の背ごしも臭みがなく美味しい(^-^)
そして粗めの柚子胡椒が美味しい
・小鉢…破竹煮
・鮎の塩焼きと鮎の飴炊き、手長海老とともに
塩焼きは蓼酢でいただきもちろん美味しいのですが、この飴炊きは絶品!
甘露煮とは違う艶感
・蟹の姿煮(大)…雌雄一匹づつ
おぉ~この日一番の楽しみです(*^^*)
今までワイワイ談話しながらいただいていた私達ですが~約1時間黙々と蟹と格闘( ´∀`)
そしてこれまたこの日の楽しみ、甲羅酒を何回もいただいたのでした
・別注…特大天然鰻の飴焼
もうお腹いっぱい!のはずだったのですが、この鰻は美味し過ぎ
蒸していないのですが、皮目はパリッと身はふっくらと、そして飴焼きで艶々です(^-^)
・蟹ご飯
もうお腹いっぱい!だけど~入るよね~(о´∀`о)
蟹の濃厚な出汁が利いていておにぎりで持ち帰りたいくらい
・香の物
・かに寄せ汁
・果物…メロン、西瓜、梨、蜜柑
果物もボリュームあり、最後までスッゴい満足感を味わえました
日本酒は、天山酒造の天山、鳴滝酒造の太閤等
地元の蔵の酒をセレクト
いったい何れがメイン料理なのか?って思うほど、どれも大満足でした
以前「比良山荘」に伺った時と似た感じの現実逃避の感覚、玉島川を眺めながらいただくお料理、目で見て、舌で味わい、本当に満足いたしました!
また季節を変えて絶対再訪したいです(^-^)
