今回も仲間のお祝いで「季節料理なかしま」さんにお伺いしました
今日もいつもの様に女将が優しく迎えてくれます、ありがとうございます
前回から4ヶ月、随分季節も移り変わりましたね
「季節料理なかしま」さん、さて、今日は何をいただけるか、とても楽しみです
今回、いただいたのは以下の通り
①梅がゆ
→前菜は梅のお粥からスタート、輪島塗の器に優しい酸味で穏やかな味わいのお粥が印象的です
②鯛の刺身
→有田焼の井上萬二の白磁に自家製ポン酢をベースに特徴的なチコリや北広島のハーブ等10種類以上の野菜の上に
周防大島の鯛の厚めの刺身が4枚ついています
鯛の刺身としては過去最高ですね
③島根の水イカ
→香川漆器の蒟醤(きんま)の上にはすりおろした唐墨がいい感じです
イカは一段と甘味が強くなる様に細く仕上げられています
④広島の地蛸
→中はレアに仕上げてあり、独特の歯応えと噛めは噛むほど出汁が出てくる蛸は特別
⑤なかしまの1番出汁と東広島恋地鶏
→香ばしさが爆発します、広島には地鶏文化は無い中、広島大学と東広島市がコラボしてブランド化した地鶏が
開発された様です
噛めば甘味が感じられる地鶏です
⑥鰻の白焼
→これまた、香ばしく、周りがカリカリ、甘くて深い味わい、レモンを少し搾り山葵をたっぷりと付けていただきます
⑦茄子の湯葉餡掛け
→湯葉が衝撃的、大量に入っていてびっくりしました
湯葉がメインの一品は上品ですが、濃厚な味わいです
⑧野菜の出汁ジュレ掛け
キングトマト、オクラ、水茄子、ヤングコーン等
→キングトマトは酸味の後、強い甘味が押し寄せます
みずみずしい水茄子とオクラに爽やかなヤングコーンとサッパリとしたお品
⑨鯛飯
味噌汁
香の物
→周防大島の鯛を使った鯛飯には厚く切られた鯛がゴロゴロと入っています
韮の味噌汁は香り良く繊細な部分もあり、香の物(柚子大根、パプリカ、胡瓜、葉山葵)との相性も抜群です
⑩抹茶のチーズケーキ
→しっかりと茶葉の苦味とコクがあります、少し大人のチーズケーキ、これは好みですね
前回に続いてテーブル席でした
ゆっくり話すにはこちらの方が良いですね
いつもなら大将の技を拝見し、大将とお話ししながら宴が流れていくのがとても好きなのですが、今回は一緒にお伺い
したのが若手でしたので、テーブルの方が緊張せずにいただける様です
いつも通り、上品な味わいのお品が多く、とても幸せな気持ちでした
中でも、鯛の刺身は今まで食べた鯛の刺身の中では過去最高のとても素晴らしいお品でした
一緒に行った若手が気に入ったのは広島の地物の蛸だったそうです
噛めば噛むほどにとどんどん出汁が出てくるのが新鮮だった様です
やはり、なかしまさんは素晴らしいですね
若手を連れていくと感動してくれるのがとても好きです
