京懐石料理と牡丹鍋のお店ですが、
私は牡丹鍋の時季にしか行ったことがありません。
建物は本格的な純和風建築で、
囲炉裏で牡丹鍋を頂くことが出来ます。
白味噌仕立てのスープで煮込んだ牡丹肉は全く臭みがなくて、まるで高級な豚肉のように食べやすいのに驚きました。かといって、やはり豚肉よりもコクがあって味わい深い。美味です。
また、たっぷりの野菜が溶け込んだスープは、時間とともに加速度的に美味しくなります。特に姿がなくなるほど溶けたごぼうの風味が味噌との相性抜群で、ポタージュスープのようにまろやか。そのスープをたっぷり吸った聖護院大根の贅沢さ!たまりません。
最後に仲居さんが作ってくれる雑炊は、言うまでもなく美味しいに決まっています。スープと卵のとろとろ加減が絶妙です。この雑炊のために牡丹鍋があるといっても言いぐらいだと思いました。(2003年3月)
久々に4人で牡丹鍋をいただきました。なんとなく2人前より4人前の方が美味しい気がしてましたが、中居さん曰く、やはり4人鍋ぐらいがいちばんバランスよく仕上げることができるそうで。
畑かくでは、予約時間の一時間前から炭を用意して、およそ1時間〜1時間半で鍋をたべて、その後雑炊に至るのがベストになるように火加減を設定してるそうです。
ならば、ということで今回はそのペースでお鍋をいただきました。おかげでいい味のスープに仕上がりました。雑炊を作るときにいつもは余り気味なスープもちょうど良い量になりました。なかなか機会はないけどまた4人で来たいです。
